Roasted Plum Bellini

    4 plums, halved and pitted
    2 tablespoons light brown sugar
    ¼ cup mango juice
    1 bottle Prosecco
    4 raspberries (optional garnish)

1. Preheat oven to 400°F. Place plum halves pit side up and top with brown sugar. Roast for about 30 minutes, until browned and juicy. Set aside to cool.

2. Puree plums in a food processor or blender until smooth. Strain puree through a fine sieve, into a medium bowl. Whisk in mango juice. Divide mixture into a 4 sugar-rimmed glasses. Mix in a splash of Prosecco into each glass, stir to combine.

3. Top each glass with remaining Prosecco and garnish with raspberry, if desired. Serve immediately.
