Raspberry Pistachio Muesli is a delicious portable breakfast!

It’s hard to eat healthy at home when your mornings are totally hectic.

Leela Cyd’s recipe for Raspberry Pistachio Muesli is a sweet solution that’s also totally portable in a Weck Jar and way better than any pre-packaged bar.

The muesli “cooks” overnight in your fridge so it’s simple to prepare in pre-work panic mode. It also tastes so good that you might forget you’re rushing out of the house. Read on for Leela’s recipe.

Raspberry Pistachio Muesli is a delicious (and portable) breakfast!

Raspberry Pistachio Muesli

    1 cup rye flakes (or rolled oats)
    1/3 cup lightly crushed pistachios, plus a little more for garnish
    2 tablespoons chia seeds
    ¼ teaspoon fine sea salt
    1 dried fig, roughly chopped
    1 cup whole milk
    ½ cup plain yogurt
    1 teaspoon vanilla extract
    1 tablespoon honey
    1 apple, cored and shredded in a box grater
    2 cups fresh raspberries
    2 tablespoons mango juice

1. In a small bowl, mix together rye flakes, pistachios, chia seeds, salt and the chopped dried fig. In a large bowl, whisk the yogurt, vanill and honey together. Pour the oat mixture into the milk and stir to combine. Stir in shredded apple, cover and refrigerate for at least 6 hours, or overnight.

2. When ready to serve, gently mash 3 ½ cups of the raspberries with the mango juice, leaving plenty of chunks. Spoon a thin layer of muesli into the bottom of a 12.05 ounce short Weck jar, add a layer of raspberry mash. Repeat once more and garnish top with fresh raspberries and extra crushed pistachios.

3. Serve immediately or cover and keep in the fridge for up to 3 days.
